Beef-Sausage Stew

SERVES 4 / PREP TIME: 30 MINUTES / COOK TIME: 1 HOUR, 30 MINUTES

One Pot You will not need a great deal of beef to create a hearty stew because the sausage is so rich and the fresh shredded cabbage adds satisfying bulk. If you have a couple of portions of stew left over, try it reheated over Cauliflower “Rice” (here) or freeze the extra for another meal. Make sure you cool the stew down completely in the fridge before placing it in the freezer to avoid freezer burn.

2 tablespoons extra-virgin olive oil

¼ pound chuck roast, cut into 1-inch pieces

1 sweet onion, chopped

1 teaspoon minced garlic

1½ cups beef broth, divided

½ pound cooked sausage, cut into ¼-inch rounds

3 cups shredded cabbage

½ cup sliced carrots

½ cup peas

1 teaspoon chopped fresh thyme

2 tablespoons arrowroot

Sea salt

Freshly ground black pepper
